Julio Quinteros Pro 5fe1dd3ec8 fix(tests): restore initialized_langfuse_clients counter after test

Save and restore litellm.initialized_langfuse_clients around
test_max_langfuse_clients_limit to prevent ordering-dependent failures
in other tests that rely on the counter's value.

In total litellm runs 1000+ tests

[02/20/2025] Update:

To make it easier to contribute and map what behavior is tested,

we've started mapping the litellm directory in tests/test_litellm

This folder can only run mock tests.
